Tater Tot Enchilada Casserole — April 27, 2016

Tater Tot Enchilada Casserole

1 lb ground beef
1 small onion
1 pkg of taco seasoning (using 2 tablespoons)
1 4 oz can of green chilies
1 bag of tater tots (using half the bag.. Give it take)
1 10oz can of mild enchilada sauce
1 bag of cheese
1/2 teaspoon of minced garlic

Toppings: diced tomatoes, lettuce, sour cream, etc

Brown meat, garlic, onions, and green chilies. Once cooked drain grease off.

Mix in 2 tablespoons of taco seasoning.

Mix in the enchilada sauce.

Add in half the bag of tater tots(frozen) and mix until completely covered. Add it to an ungreased 9X13 pan and top with grated cheese. Place in the oven on 350° for 25-30 minutes.

Serve with tomatoes, lettuce, sour cream, etc

Key lime pie — March 18, 2016

Key lime pie

1 can of condensed milk
1 pkg of cream cheese (room temperature)
3/4 cup of fresh lime juice (usually 4-5 limes depending on size too)
1 pre-made graham cracker pie crust
Whip cream

Mix cream cheese until fluffy on high.

Slice limes and squeeze the juice out.

Once the cream cheese is fluffy, add condensed milk & lime juice. Mix until completely smooth.

Add mixture to pie crust and place in freezer for 2-5 hours or over night.

Add whip cream and zest a lime over the top .

Stuffed bell peppers — October 8, 2015

Stuffed bell peppers

1 lb of hamburger meat OR turkey meat
1 small onion
1 can of rotel
1 cup of rice
4-5 bell peppers
16 oz of beef broth
4-5 small/medium size potatoes
1/2 teaspoon of minced garlic
1 teaspoon of garlic powder and onion powder
Salt/pepper to taste
Shredded cheese

I normally use the crock pot for this recipe and I wholeheartedly believe it is so much better that way.

Cook ground beef with half of a chopped onion, minced garlic, seasonings, and add the rotel to your liking. I normally add half a can plus all the juice.

***cook your rice during this process***

Meat after it is cooked.

Cut the top off the bell pepper, de-seed, and rinse.

Place bell peppers in pot then place your peeled and chopped potatoes in all the empty places.

Mix the meat and rice all together. Once mixed stuff into the bell peppers.

Add the beef broth, cover and cook between low and medium until tender. About an hour or so.

Crock pot instructions: cook on high for 4-6 hrs or low 6-8 hrs.

Finished product. I top it with cheese and it makes it so much better.

Pudding Cookies – Banana Cream. — May 21, 2015

Pudding Cookies – Banana Cream.

1 small package of banana cream pudding
1 cup of sugar
1 1/2 cups of flour
1/2 teaspoon of salt
1/2 teaspoon of baking powder OR 3-4 pinches of baking soda
2 eggs
3/4 cup of butter

Mix the sugar and butter together until creamy. Once this is mixed up, add the eggs and lightly mix them in.

In a bowl mix together all DRY ingredients. Slowly mix it in with the sugar, butter, and eggs.

Preheat oven at 350° and bake for 8-10 minutes or until brown enough to your liking.

They are so good and reminds me of banana pudding 😀

Taco egg rolls — May 18, 2015

Taco egg rolls

1 lb ground turkey OR beef
1 can of refried beans
Shredded cheese
Egg roll wrappers
1pkg of taco seasoning
Vegetable oil
Bowl of water
*Any additional taco toppings or sauces you would like*

Brown meat and add seasoning. If using beef make sure to drain off grease.

Once meat is browned mix in refried beans. Occasionally stirring until heated up.

Add cheese and meat (& any other toppings you wish to add) down the center liked pictured.

Fold the top and bottom corner. (In the picture I had already turned the egg roll so I could roll it.

Wet both remaining corners by dipping your finger in water and rubbing around the edges. It doesn’t take much. This will help keep the egg roll together. Fold one corner over and from there begin to roll it tightly towards the remaining corner.

What it should look like after you finish rolling it.

Heat your oil on medium. Once it is hot enough drop your rolls 2-3 at a time for approximately 2-3 minutes or until golden brown. Make sure you have enough grease in the pan to completely submerge the egg roll so it cooks evenly.

Chili cheese taco bake — April 14, 2015

Chili cheese taco bake

1 bag of chili cheese Frito’s
1can of nacho cheese
1 can of refried beans
1 lb of ground turkey OR ground beef
1 can of rotel
Mexican style shredded cheese
2.5 teaspoons of cumin and chili powder
2 teaspoons of minced garlic
1.5 teaspoons of garlic powder
1.5 onion powder
Salt to taste
1 small onion chopped

Add the cumin, onion powder, minced garlic, chili powder, salt, garlic powder, and onion to the meat will browning it.

Heat up the cheese and add the juice from the rotel and 1/3 of the can. Stir occasionally until heated up.

**Once the meat is browned stir in the refried beans until heated throughout.***

In a 9X9 pan add a layer of Frito’s. You MAY NOT use the entire bag.

Preheat oven at 350°**

Spread the meat/bean mixture over the chips evenly as possible.

Spread the cheese over the meat/bean layer.

Sprinkle the shredded cheese and bake in the oven for 15-20 minutes or until bubbly.
