1 15 ounce can of black beans(drained and washed)

1 14.5 can of rotel I use mild

1 10 ounce bag of frozen corn

1 chopped onion

1/2 cup of chopped bell pepper of your choice

1 10 ounce can of enchilada sauce ( I use mild by old el paso)

1 10.75 can of condensed cream of chicken soup

1 1/2 cups of milk( I use whole but you can use whatever your family uses)

2-3 chicken breast

1 1/2 cups of cheese

Combine all veggies into crock pot.

Put your chicken breast on top of veggies.

Whisk together the enchilada sauce and the soup, then slowly stir in the milk. Once you have that mixed well together pour over the chicken.

Cook this on low for 6-8 hours or high for about 4 hours(or at least till the chicken is done)

Once the chicken is cooked and falling apart, remove the chicken to cut it up into little pieces. I add about a cup of cheese into the crock pot to thicken it up a little bit. (this step is optional) Continue to cook until the cheese has melted(if you choose to add the cheese)

Serve it with cheese, crushed chips, sour cream, etc
