I usually make this on the stove but this time tried it in the crock pot.. NEVER AGAIN WILL I DO THAT!!

I’m going to post the recipe as if I made it on the stove.

2 cups of water

32 oz of beef broth

1 bag of frozen mixed vegetables(I use about 1/2 a bag)

1 can of corn(using about 2/3 of the can with juice)

3-4 peeled and cubed potatoes

1 handful of carrots

8 oz of tomato sauce

1/2 cup of chopped onion

1.5-2 lbs of cooked and drained ground beef

1 can of rotel(optional but makes it sooo good!!)

1.5 cups of cooked noodles of choice

salt & pepper to taste

Add potatoes & carrots to a stew pot

Add tomato sauce

Add mixed veggies.

Add corn.

Add onions.

Add your ground beef, beef broth, and water. (Remember I unfortunately cooked this in my crock pot so not everything in this step is pictured)

(I had just finished cooking it so yes, you can see the steam coming off of it)

Cook between low and medium until carrots and potatoes are TENDER. It usually takes about an hour or so.

If you are impatient like me, you can cook it on medium for faster results.

When the soup is almost finished, you can cook your noodles in a separate pot and add them to the soup.

(also when I cook my noodles I add a splash of vegetable oil in the water to help the noodles from sticking to the pan and each other)

This is what it should look like when its finished(the onions should be transparent. This was taken before it was actually finished BUT you get the idea)

***This is a great meal to freeze as well***
