2.5-3 lbs of Semi-peeled and diced potatoes
8 oz of cream cheese
1 tablespoon of minced garlic
salt/pepper to taste
1/3 block of velveeta
4 cups of chicken broth
1 small onion chopped
Chives, bacon, shredded cheese, sour cream
Add your potatoes to the crock pot
Add your onions, chicken broth, garlic, & salt and pepper.
Cook on low for 8-10 hours or high for 6-8 hours.
Once the potatoes are soft, take a potato smasher and smash up the potatoes.
You do want some chunks, so don’t try and make it ‘smooth’
Add the 8 oz of cream cheese.
Add 1/3 of the block of velveeta and stir occasionally. Once the cheese and cream cheese has melted all the way it is ready to serve.
