1 box of Zaterain’s yellow rice
2-4 chicken breast(again depending on the size of your family)
1.5 of shredded cheese
1 can of cream of chicken
1 can of rotel
1 can of corn
Add the can of rotel and cream of chicken to the crock pot. You can stir it together once you put it in the crock pot or before in a separate bowl.
Place the chicken breast in the mixture. Cook on low for 4-6 hours or high for 2-4 hours(OR until chicken is falling apart)
Once the chicken is cooked take it out and shred it before adding it back to the crock pot.
**at this stage go ahead and cook rice as directed on pkg. by the time the rice is done the corn will be cooked all the way**
Add your cheese and corn. I added 3/4 of the can of corn and it was too much for our liking. I would suggest adding a little at a time to make sure you don’t OVER do it.
Stir together well.
Once your rice is cooked, stir it into the mixture. Give it about 5 minutes and then serve it 🙂
