2 cups of beef broth
1.5-2lbs of semi-peeled potatoes(or enough to fill the crock pot half way up)
2 spoonfuls of sour cream
1 handful of cheese(or you can use more)
salt & pepper to taste
1 tablespoon of minced garlic
Add the potatoes, beef broth, garlic, and salt & pepper to crock pot. Cook on low for 6-8 hours or high for 4-6 hours(or till they are tender)
Once the potatoes are TENDER use a potato smasher and smash up the potatoes. do this before adding the rest of the ingredients. Once the potatoes are smashed add your sour cream and cheese giving it a good stir.
The potatoes have a brown color to them due to the beef broth. These tasted sooooo good. The beef broth gives it almost a smoke flavor. It reminded me of a baked potato I’ve had cooked on a BBQ pit.
