Corn tortillas(depends on how many you will eat)
1 can of refried beans
taco seasoning of choice
2-4 chicken breast depending on family size(usually one breast per person)
Pre-cook your chicken. I usually just boil it then shred it once its cooked. Once you have shredded the chicken, put it in a pan with taco seasoning(go by the directions on the pkg)
Heat a large skillet over high heat. Place one tortilla on the hot skillet, allow to cook for a couple seconds, carefully turn the tortilla and cook on the other side, remove to a plate. The tortilla should be flexible now.
Place tortilla on a plate to get started assembling it.
You can either warm up the refried beans on the stove or just apply them straight out of the can. They will be heated up when you fry up the taquito.
Add the sour cream.
Add shredded chicken and cheese.
Roll up and place it on the side seam down.
Heat up just enough oil to cover the bottom of pan. I heated up in between med and med high. Once your oil gets hot enough, place the taquito seam down. I cooked it about 2-4 minutes on each side or until golden brown. In between flips I moved the taquito around to make sure it didnt stick to the pan.
Serve with pico de gallo, queso, salsa etc.
