2 Large Potatoes diced
Handful of shredded cheese of choice
2 Tablespoon of olive oil
Salt & Pepper to taste
Real bacon bits
Add diced potatoes to pot with water covering them up. Cook until tender(as if you are making mashed potatoes)
Drain water from potatoes and set aside for a few minutes.
Heat oil in skillet on medium. Once hot enough add the potatoes.
Stir every 4-5 minutes until they are golden brown or crispy like fries.
Once potatoes are crispy brown, sprinkle cheese and bacon bits on top.
Now your ready to serve 🙂
