1 large onion- chopped
1-2 red bell pepper sliced
1 pkg of fajita seasoning
2-4 chicken breast(1 chicken breast per person)
Add sliced bell peppers, onion, and the juice from ONE HALF of the lime.
The fajita seasoning I use.
Take the seasoning and sprinkle it all over the veggies & chicken. I flipped the chicken over and coated both sides.
I used ALMOST all the seasoning. If you cook more than 2 chicken breast you will probably use it all.
Cook on low for 6-8 hours or high for 4-5 hours(or until chicken just falls apart)
Once the chicken is tender enough to just fall apart take the chicken out and shred it or cut it up with a knife. Put back in the crock pot and let it merry in the juice for about 20 minutes.
Serve with sour cream, cheese, pico de gallo, etc
