1 yellow onion
3-5 potatoes (depending on size)
2 cups of carrot (give or take)
**YOU CAN ADD ANY OTHER VEGETABLES YOU LIKE**
2 tablespoons of water
2 tablespoons of olive oil
**I separated the potatoes and carrots because my husband does not like carrots & onions. PLEASE feel free to combine all your veggies together**
Cut up your onion, add carrots, 1 tablespoon of water & olive oil(drizzle on top) sprinkle salt & pepper. I like my vegetables super plain but it would be good with some basil, thyme, and rosemary.
Add potatoes, 1 tablespoon of water & olive oil, salt & pepper. Again would be great with basil, thyme, and rosemary.
Fold up & place in crock pot for 6-8 hours on low OR 4-6 hours on high.
Yummy and so tender! The onions gave a very sweet taste to carrots. It almost tasted like caramelized carrots 🙂
