2 -3 chicken breast
1 box of Zatarain dirty rice mix
2 1/2 cups of water
1 teaspoon of cumin
1 small yellow onion
Taco shells of your choice
Taco toppings of choice
Cut up chicken to either dime or nickel size pieces.
In a pot dump your chicken, diced onions, and salt/pepper to taste. Cook on medium until chicken is cooked.
Mix in your cumin.
The dirty rice mix for anyone who has never seen it before.
Stir in package of rice mix. There is liquid from the chicken so I mixed it up well and let it sit together for 2-3 minutes before adding the water.
What it should look like after sitting a few minutes before water is added.
Add water and wait until it comes to a boil as seen in the picture. Once it is boiling turn the heat down from medium to low or a tad higher than that. Cover with a lid and let it simmer for 25-30 minutes. I would start checking it around 20 minutes.
Finished product. Now put it in your taco shell and top with your favorite taco toppings.
