Brownies

1/2 cup (1 stick) butter or margarine, softened
1 cup sugar
1-1/2 cups Chocolate syrup( Hershey chocolate syrup)
4 eggs
1-1/4 cups all-purpose flour
1 cup Semi-Sweet Chocolate Chips
Optional: 1 cup of chopped walnuts

Mix butter & sugar until it is creamy.

*Heat oven to 350°F. Grease 13x9x2-inch baking pan*

Add the eggs, syrup, & flour and mix well. Once mixed, fold in the chocolate chips and walnuts(if you add them).

The batter all mixed up.

Bake for 25-30 minutes.

Pizza Pasta One Pot Wonder — December 14, 2014

Pizza Pasta One Pot Wonder

Sorry for no pictures. My camera is broken at the moment.

1 tablespoon of olive oil

1 lb of ground turkey OR ( you can use ground beef or Italian sausage)

1/2 cup of mini pepperoni’s OR regular ( I think I would prefer regular due to the mini’s are a little thicker for my liking)

15 oz of tomato sauce

1 tablespoon of Italian seasoning

1 teaspoon of minced garlic

salt/pepper to taste

1 1/2 cups of bow tie pasta

1 1/2 cups of Mozzarella cheese -shredded

1 small onion (optional)

1 3/4 cups of water

Heat up oil in an oven safe skillet on medium. Once the oil is hot enough, place your ground turkey, minced garlic, and onion(if you are adding it). Cook until brown and drain off any excess fat if you have any.

Stir in the tomato sauce, all the seasonings, pasta, pepperoni’s, and 1 3/4 cups of water. Bring to a boil, cover, and reduce heat to low. Should take the pasta 15-20 minutes to cook through. You will just have to gauge it.

Once the pasta is done stir in 1/2 cup of mozzarella cheese. Sprinkle the rest on top. If you want to melt the cheese and get a golden brown on top place it in the oven on broil for 2 minutes give or take.

Sweet Pepper Smoked Sausage & Rice — December 8, 2014

Sweet Pepper Smoked Sausage & Rice

1 14 oz of smoked sausage
1 orange bell pepper
1 red bell pepper
1 cup of rice
1/2 teaspoon of cumin (give or take)
1/2 teaspoon of onion powder (give or take)
1/2 teaspoon of garlic powder
1/2 teaspoon of minced garlic
1 tablespoon of olive oil
2 cups of water

This is the sausage I used. I found it at walmart.

Heat up the oil in a pan and once it gets hot enough put the minced garlic, sausage, and peppers in. Stir occasionally for 5 minutes.

Add in your rice and stir around until it starts browning.

Once the rice has browned, add in the seasonings along with the water and stir together. Cover and cook for 20-25 minutes or until rice is done.

Mexican Style Stuffed Bell Peppers — October 16, 2014

Mexican Style Stuffed Bell Peppers

3 large red bell peppers
3 large green bell peppers
1 lb of lean ground beef(can substitute with turkey meat)
1 cup of white OR brown rice
1 small onion
1 can of rotel
1 can of corn (drained)
1 can of black beans (drained & rinsed)
1 teaspoon of cumin
1 teaspoon of onion powder
1 teaspoon of chili powder
Shredded cheese
Cilantro
1 1/2 teaspoon of minced garlic

Wash, sliced down the middle, de-seed & de-vein the bell peppers.

In a large pot start boiling water. Once the water comes to a boil drop the peppers in the pot for roughly 5 minutes. They should be soft but still have a stiffness to them.

Roughly after the 5 minutes of the peppers being in the boiling water, pull them out of the water and place them in a baking dish.

In a pan throw in the meat, seasonings, onions, & minced garlic. Cook until brown.

While meat is cooking get the rice cooking. Follow directions on package of rice.

Once the rice is done mix in the meat mixture, corn, rotel, & beans.

Stuff the peppers with the rice mixture. Cover the dish(es) with foil.

Preheat oven at 375. Cover dish(es) with foil. Bake for 30-35 minutes.

Rustic Chicken Stew — October 15, 2014

Rustic Chicken Stew

3-4 chicken breast
32 oz of chicken stock
3 stalks of celery
2 cups of carrots
1 medium yellow onion
3-4 Roma tomatoes chopped
3-4 red potatoes chopped
1 can of black beans
1 tablespoon of garlic powder
1 tablespoon of basil
1 tablespoon of parsley
1 tablespoon of onion powder
1 teaspoon of minced garlic
Salt/pepper to taste

Throw everything into your crockpot and cook on high for 4-6 hours or low for 6-8 hours.

You can cook it until the chicken falls apart or take it out close to the end and chop it up.

I cut up some white corn flour tortillas into strips and fried them up to garnish the stew. They went really well with this stew.

Meatball Kabobs — October 14, 2014

Meatball Kabobs

1 lb ground turkey meat
2 teaspoons of Italian seasoning
1 teaspoon of minced garlic
1 teaspoon of onion powder
1 cup of shredded mozzarella cheese
1/2 cup of Italian bread crumbs
1 jar of favorite spaghetti sauce OR marinara sauce
1 can of Pillsbury round Cresent rolls OR bread sticks

In a bowl mix in the meat, the seasoning, cheese, garlic, & bread crumbs.

Once you have it mixed up begin to form the meatballs.

Make the balls about half an inch in diameter.

***If you use wooden skewers you will want to pre-soak them in water for a few hours before using them so you do not get splinters in your food.

Start with putting the end of the start of your bread then a meatball and continue until you run out of the bread stick or Cresent roll. Some I made only had three meatballs while others had four.

Heat your oven at 375 & bake for about 20 minutes.

I removed the skewer and this is how it turned out. The bread cooked around the meat ball. Ahh so good!!

Heat up your spaghetti sauce or marinara sauce in a pot on the stove. Spoon it over the top and sprinkle some mozzarella cheese on top.

One Pot Wonder Smoked Sausage Pasta — October 13, 2014

One Pot Wonder Smoked Sausage Pasta

14 oz of smoked sausage
1/2 cup of heavy whipping cream
1 can of rotel
8 oz of pasta of your choice
1 cup of shredded cheese of your choice
2 cups of chicken broth
Pepper to taste
1 small onion chopped
1 tbsp of olive oil
2 tsp of minced garlic

Heat up oil in pot and place sausage/onion in pot. Cook until lightly brown(or onions are translucent). Now add your garlic.

Add in the rest of the ingredients EXCEPT the cheese.  I had my temperature on medium while cooking this. Bring to a boil.

Now once it starts to boil, turn the temperature inbetween low & medium & cover with a lid for about 15 minutes.

Remove the lid, turn the heat off,  & mix in the cheese. Let it sit for about 5 minutes after mixing in the cheese and then serve.

I did not snap a final photo but I will just say my picky husband had THREE bowls of this meal. You will not regret making this. The sausage flavors the entire pasta dish with a bold taste. I cannot wait for cold, winter days to make this again 🙂 ENJOY
